Context and commentary on verse 7.8
From here four verses point out, one by one, the thread of the garland. The Lord takes the most essential quality of each thing and says, ‘that is I’. Taste for water and sound for space are the special qualities of the elements.
Shankara carries on the word ‘strung’ from the last verse: water is strung on me as its taste, the Vedas on me as Om, space on me as sound. ‘Paurusha’ is the essence by which a person is recognised as a person.
Ramanuja gives one explanation for all four verses: these special states have all come from me, they abide in me as my body, and so it is I who stand in their form.
Madhva comments on verses eight to twelve together. This, he says, is the ‘vijnana’ of the second verse. Water and the rest also come from the Lord, but these particular words appear to show that he in particular governs essences such as taste, and to serve as forms for meditation.

A glass of water drunk when we are thirsty. We rarely notice its taste. This verse points to God not only in the temple but in that glass as well.
When fever leaves the mouth bitter, or when taste changes during chemotherapy, people realise the worth of that ordinary taste. Noticing it while we still have it is the first step of gratitude.
