Context and commentary on verse 17.10
The acharyas give ‘yatayama’ different senses. According to Shankara it means poorly cooked, since what has lost its strength is already covered by ‘gatarasa’. According to Sridhara Swami it is rice and the like that has gone cold after a yama, about three hours, has passed since cooking. For Ramanuja it is what has been kept a long time. ‘Paryushita’ for Shankara is what has passed a night after cooking.
Ramanuja makes one exception to ‘uchchhishta’: it is what others have eaten and left, apart from the guru and the like. ‘Amedhya’ is what is unfit for sacrifice, that is, not what remains after offering in sacrifice. Such food, he says, grows tamas further. Madhva’s comment on this verse is not in our source text.

If cooked rice is left out for a long time, certain germs that grow in it can produce a toxin causing vomiting and diarrhoea. Even reheating may not destroy that toxin.
It is safe to cool leftovers quickly, keep them in the fridge, and heat them thoroughly again before eating. Not wasting food and eating it safely both matter.
